Tomatillo Slow-cooker Pork

For those of you who follow me, you have probably seen the post of one of my favorite dishes, tomatillo enchiladas. I decided to use the tomatillo sauce as a marinade for a pork tenderloin to cook in the slow cooker and then shred for some tacos (and bowls to cut the carbs!) Fully loaded tomatillo pork tacos Ingredients 9 tomatillos (husked and rinsed, as they are sticky)1 serrano chili (seeded for less heat)1 jalapeƱo (seeded for less heat)1/2  white onion2-3 cloves garlic1/2 cup cilantro leaves, I just cut the top off of an entire bunchsalt and pepper to taste3/4… Read the rest

Curried Chicken Salad

A very flavorful and colorful dish! So my husband is eating low-carb and low-sugar right now. Yes, I should be trying to eat that way too, but it’s just not in the cards for me right now, haha. Sometimes with the girls its too difficult to cater to that diet šŸ™‚ I’ve been brainstorming dinner ideas that are low-carb and low-sugar but could also be paired with a carb for the girls. This is a very simple recipe, as you are making… Read the rest

Chocolate Chip Pizookie

Chocolate Chip Pizookie! My favorite dessert by far. Are you looking for an easy make-ahead dessert? I am obsessed with the pizza cookie, or ‘Pizookie.’ My obsession with these began in college at CU Boulder thanks to BJ’s Restaurant and Brewhouse. I found these cute mini cast iron skillets from World Market, but they carry them at Target and Bed Bath and Beyond also. I found a great recipeĀ for pizookies from Martha Stewart that doesn’t require an electric mixer. You can make any flavor cookie you like! Don’t forget to serve with a scoop of ice cream (or 2)… Read the rest
